Glazed Cranberry Bread: A Sweet And Tangy Celebration Of The Season

I happen to love the holiday season for a ton of different reasons.

I mean, between getting gifts, giving them, and eating delicious food in a beautifully decorated house, what’snot to love?

But one of my very favorite parts of Christmastime (and wintertime in general!) is the opportunity to eat tons of tasty seasonal food that I don’t get during the rest of the year.

For me, a significant part of all that Noel joy is enjoying tasty treats like this Candy Cane Brownie Trifle, alongside gingersnaps, chocolate oranges, and, of course, plenty of egg nog!

And this year, we have a new Christmas-ready recipe to add to the canon Glazed Cranberry Bread!

It’s the perfect addition to a heaping Christmas table laden with glazed ham and scalloped potatoes, or it’s totally delicious on its own!

Then, on December 26th, toast the leftovers for breakfast while you relax with your near and dear, and start planning for next year!

Cook: 40 minutes
Prep: 20 minutes
Serves 8

Ingredients
  • 3/4 cup sugar
  • Flour
  • 1/4 cup butter
  • 4 oz. cream cheese
  • 2 eggs
  • 1/2 tsp. vanilla
  • 1 cup chopped cranberries
  • 1/2 cup powdered sugar
  • 1 Tbsp. orange juice
  • Cooking spray
  • Additional sugar
Instructions
  • Spray loaf pan with cooking spray, then coat the interior with sugar.
  • In a mixing bowl, combine 3/4 cup of sugar, butter, and cream cheese. Cream together.
  • Fold in flour, eggs, and vanilla.
  • Add sliced cranberries to the batter, mix well.
  • Pour batter into the loaf pan, bake 40-45 minutes at 350 degrees.
  • While it's baking, combined powdered sugar and orange juice. Whisk well to form a glaze.
  • When cake comes out of the oven, drizzle liberally with glaze.
  • Serve and enjoy!
